How to make Goat Milk Panna Cotta and Dried Fig Leaves ; Popular and Easy Gourmet Dessert Recipe

 

 

 

A delicious Panna Cotta flavored with dried fig leaves. The recipe shows how to combines striking ingredients to make easy dishes. The recipe below is for 4 individual serving.

 

Ingredients:

 

  • 1 oz fig leaves – about 6 leaves
  • 8fl oz goat milk
  • 8fl oz double cream
  • seeds from ½ vanilla pod
  • 2¾ oz caster sugar
  • ¼ oz gelatine – about 4 leaves
  • 8 fresh figs, quartered

 

Directions:

 

Wash and dry the leaves and leave in an airing cupboard or warm place for about a week to dry. Strip out the stems and blitz the leaves to a powder using a pestle and mortar or food processor.

Pour the goat milk and cream into a saucepan, add the vanilla seeds and sugar and bring to the boil. Simmer for one minute then remove from heat. Add the powdered fig leaves and cover with clingfilm. Leave to infuse for 10 minutes. Meanwhile soak the gelatine in cold water.

After 10 minutes squeeze out the gelatine leaves and add to the cream, stirring to help it dissolve. Infuse for a further 20 minutes, then pass through a fine sieve into a jug. Pour into four 5fl oz moulds and leave to cool completely before refrigerating until set – about four hours.

To serve, dip the moulds briefly in hot water, run a blunt-tipped knife around the edge and gently tip on to a plate. Decorate with fresh figs and serve.

How to make Fruits Ice Cream Using Goat Milk – Popular and Easy Dessert Recipe

With the fresh sweetness of blueberries and pineapple,  this homemade fruit ice cream screams Summertime. Additionally, fruit ice cream is a great way to “chill out” from the summer heat.

 

This recipe is for a 4 quart ice cream freezer, and produces a mild ice cream treat. If you prefer a richer ice cream, just replace some of the liquid with heavy cream, or make it into a custard by cooking a few whisked egg yolks with the milk and sugar.

 

Ingredients:

 

  • 6 cups (1 1/2 quarts) goat milk
  • 2 cups half and half  or heavy whipping cream
  • 2 cups blueberries – fresh or frozen-thawed
  • 2 cups pineapple – fresh or canned
  • 1 3/4 cups sugar
  • 1/2 tsp. salt
  • 1 Tbsp. vanilla extract

 

 

Directions:

 

  • Blend the blueberries and pineapple in a blender or food processor until mostly smooth. If you are using a blender, you may need to add a little goat milk for liquid to ease in blending.

* Note – If you are new to ice cream making and if you are adding fruit to your ice cream, remember to puree it first! Otherwise, those lovely fresh slices of fruit will be frozen and end up hard as a rock in your ice cream. Actually, the pureed fruit adds much more flavor than simple fruit chunks.

  • Pour 1 quart of the goat milk in a sauce pan and heat to scalding – there should be steam coming from the milk but, it should not boil. Remove from heat and add sugar and salt, stirring until completely dissolved.
  • Place mixture in refrigerator or freezer until chilled. When cold, add the remainder of the goat milk, the half and half, vanilla extract and fruit mixture.
  • Pour into ice cream freezer canister and follow the instructions as per  your ice cream maker.

 

 

To store ice cream, if you have ice cream left over that you must store in the freezer, store it in single-portion sizes, as homemade ice cream becomes brick-hard in the freezer, and will be impossible to scoop unless you first melt it.

 

*More suggestion:

You can use your single-portion leftover ice cream to make a smoothie by throwing it in the blender with some extra goat milk.

How to make Goat Milk Chocolate Pudding – Popular and Easy Gourmet Dessert Recipe

One of my favorite desserts!

 

Fresh goat milk adds an excellent creamy texture and favor to chocolate pudding. A good amount of *dark chocolate (85% cocoa) and a good amount of cocoa powder create a dark rich flavor. Egg yolks and cornstarch thicken the pudding as it simmers, resulting in a wonderfully dense pudding that is as comforting served warm as it is refreshing served chilled.

 

Ingredients:

  • 2 2/3 cups of fresh goat  milk
  • 3/4 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 4 egg yolks, lightly beaten
  • 2 tbs. cornstarch
  • 1 tbs. butter
  • 1 1/2 tsp. Vanilla
  • * Optional – 3.5 ounces dark chocolate (85% cocoa)

 

Directions

  • *Optional – Break the dark chocolate into pieces and place in a metal bowl or top section of a double boiler. Bring about a cup of water to a simmer in a small saucepan or the bottom section of a double boiler. Place the vessel holding the chocolate over the simmering water and turn off the heat. Allow the chocolate to melt gradually.
  • Meantime, in a medium saucepan combine sugar, cocoa, and cornstarch. Stir in goats milk.
  • Cook and stir over medium heat until mixture is thickened and bubbly. Cook and stir for several more minutes. Remove from heat.
  • *Optional – At this point you can stir in the melted chocolate.
  • Gradually stir in about 1 cup of the hot mixture into beaten egg yolks (*Note: use a wire whisk and beat briskly or else lumps will form).
  • Return all of the egg mixture to the saucepan and beat briskly with a wire whisk and bring to a gentle boil. Reduce heat. Cook and stir for 2 more minutes. Remove from heat.
  • Stir in butter and vanilla. Pour pudding into dessert bowls or 4 individual serving cups.
  • Serve warm or chill until ready to serve.
