How to make Lemon Goat Milk Ice Cream

 

Have an eye for something cold and sweet, but not so rich?

 

This recipe using Stevia, instead of sugar for sweetening, making it a healthier treat.

 

Ingredients:

 

  • 1 1/2 cups goat milk
  • 1 egg
  • 1/2 tsp gelatine -mixed in 1/8 cup warm water and let stand until clear
  • 1/4 tsp stevia powder
  • juice from 1 lemon
  • zest of 1/2 lemon

 

* Optional;You can add any fruit to this ice-cream and also chocolate if you wish.

In addition, you can also serve warm or cooled chocolate sauce over ice cream

 

 

Directions:

 

  • Beat egg and Stevia powder together until creamy.
  • Add lemon and zest and beat until combined.
  • Add goats milk and gelatine and beat until well combined and fluffy.
  • Refrigerate for approximately 1 hour.
  • Process in Ice-Cream Maker for 20-30 minutes.
  • Place in container in freezer.

 

*Optional;  If you do not have an ice-cream maker, freeze in shallow tray for 1/2 to 1 hour and return to bowl and beat. Repeat this process one more time and then place in container and freeze.

Ingredients:

 

  • 2 quarts whole goat milk

  • 6 oz. sweetened orange gelatin mix

  • 1/4 cup lemon juice or the juice from two lemons

  • 2 cups water

  • 2 cups sugar

*Optional – 1 can mandarin oranges, finely chopped

 

Directions:

 

  • Bring water to a boil in a saucepan. Remove from heat, and add gelatin and sugar, stirring well with a whisk until dissolved. Add lemon juice, and let mixture cool in the refrigerator, or by placing in a larger pan of ice water.
  • Add goat milk, stir well, and freeze according to your ice cream maker’s directions.
  • A fresh mint leaf, orange slice, or curled orange peel makes a beautiful garnish for this simple, but divine dessert.

This ice cream recipe is a creamy custard-style frozen treat with a rich coffee and goat milk base and delicious mini chocolate chips for variety. Goat milk makes a delicious creamer for coffee, and similarly this recipe captures that wonderful flavor in a delightful, cold sensation. The recipe below is for a 4-quart freezer.

 

Ingredients:

 

  • 2 quarts whole goat milk
  • 1 can evaporated goat milk
  • 4 Tbsp. instant coffee
  • 4 eggs
  • 2 cups miniature semi-sweet chocolate chips
  • 1 Tbsp. vanilla extract
  • 1/2 tsp. salt
  • 2 Tbsp. flour
  • 2 cups sugar

 

Directions:

 

  • Mix sugar, salt, flour and instant coffee in a saucepan. Gradually stir in 1 quart of goat milk. Cook over medium heat, stirring constantly, until thickened – approximately 15 minutes.
  • In a separate bowl, whisk the eggs until well beaten. Slowly add a cup of the hot milk mixture to the eggs, stirring well.
  • Pour the egg-milk mixture into the saucepan, stirring constantly for 1-2 minutes. Remove from heat and chill in the refrigerator for several hours until cool, or place pan in a larger pot of ice water, stirring frequently, to cool more quickly.
  • Combine the evaporated milk, remaining quart of goat milk, and vanilla extract. Add the chilled, cooked mixture and stir well with a wire whisk. Pour into ice cream freezer canister. Add chocolate chips, and freeze according to your ice cream manufacturer’s instructions.
